
Gluten free gingerbread with coconut sugar
Dear friends, December is the time when the scent of cinnamon, ginger, and honey fills our homes. It’s also the moment when we prepare holiday treats, and gingerbread cookies hold a special place among them. Today, I’d like to share my recipe for healthy gingerbread cookies. They’re not only delicious but also friendly for those avoiding gluten and refined sugar.
These gingerbread cookies are slightly crispy and full of spice flavor. Preparing them is a great idea for a family baking session—kids love cutting out shapes with cookie cutters!
Ingredients:
- 350 g gluten-free flour
- 1/4 teaspoon xanthan gum (not needed if using bread flour with xanthan gum)
- 1 teaspoon baking powder (aluminum-free)
- 3 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 125 g cold butter
- 100 g coconut sugar
- 2 tablespoons honey
- 1 egg
Preparation:
- In a large bowl, mix the flour, xanthan gum, baking powder, ginger, and cinnamon. Add the cold butter cut into cubes and rub it between your fingers until the mixture resembles breadcrumbs. You can use a food processor for this step.

2. Add the coconut sugar, honey, and egg. Knead the dough until it’s smooth. Shape it into a ball, wrap it in plastic wrap, and chill in the fridge for at least 30 minutes.

3. Roll out the chilled dough to about 5 mm thickness, then cut out your favorite shapes.

4. Place the cookies on a baking sheet lined with parchment paper and bake at 180°C for 8-10 minutes, until they’re lightly golden. After cooling, you can decorate them with icing, chocolate, or simply sprinkle with a bit of ground xylitol. Store in an airtight container to keep them crispy.
